Try and use the interactive graphs of Noi Italia, the information system that Istat updates every year and contains data that can be visualized at national, regional or European level. Once in the system, from the top menu select the theme you are interested in exploring, then click on the ‘dashboard’ button/icon on the right and make choices to interact and display the graph.
